Martin Moore, cellar master at Durbanville Hills, reckons winemaking is pretty much the same – you never know what you’re going to get from year to year, vintage to vintage. “Every season brings its own challenges,” he says.

The man who makes a trio of best-selling Sauvignon Blanc should know – and will keep an eye out to see what the 2011 vintage will bring.
